Thanks for the link Vin. I checked the web site when I first got the knife but I must of missed it. I'll keep an eye out for the TV show too.

I like Wusthof Classic. We got a set and some extras. We especially like the 6.5" Santoku.

We bought a set of Mundial knives not too long ago. They are working very well. They are sharp and feel good to use - I would recommend them.

My wife and I enjoy home cooking and after watching an episode of Good Eats about knives, this is the set we decided on - relativly cheap, made from the right kind of steel and featuring the selection of various knife-types we were likely to use.

I can't comment much on longevity since we only had them for 6 months - but they feel as sharp now as when we got them.

Sorry for the lack of response, friends in town.......
No-one but the maker. Anyone else is just gonna destroy it. Be sure to use only wood, plastic or plastic and wood composite cutting boards. Glass and marble type boards and your counter tops, will just expedite the dulling process.
Thanks Vin, for the link.
(BTW wood boards have been proven to more sanitizable (sp) than the plastic ones)

End grain maple is the best choice.

Just browsed all 4 pages....of this thread.

Buy what feels best in your hands. It's a preference thing.
Same thing with cutting boards. I like how ~german~ knives feel on the Epicurean/MDF cutting boards but I prefer with the Shun's --- my walnut/cherry cutting board.
